Mămăligă has a gentle corn flavour and a soft, comforting texture that welcomes all kinds of bold toppings. Spoon over a rich stew, add a garlicky sauce, or finish with warm fruit and toasted nuts. These seven plant-forward pairings let it take centre stage at any meal.
At a glance: cook it soft for bowls, or thicker when you want slices to grill or bake. Pair it with something savoury and substantial, then add herbs, citrus, pickles or toasted seeds for brightness and crunch.
Start with the right texture
For four servings, bring 800 ml water and salt to a boil. Gradually whisk in 200 g cornmeal to keep lumps from forming. Lower the heat and cook, stirring often, until creamy and pulling away from the sides of the pot; timing depends on the grind. For grilled slices or oven-baked layers, cook it a little thicker and let it cool in a shallow pan.
Seven delicious pairings
1. Garlicky mushroom ciulama with dill
Brown sliced button or oyster mushrooms in a skillet, then add onion, garlic and a pinch of thyme. Make a silky sauce by stirring in a spoonful of flour mixed with water, or a spoonful of cashew paste. Finish with plenty of fresh dill. Spoon over hot mămăligă and add a squeeze of lemon to lift the earthy flavour.
2. White beans simmered with tomato and parsley
Warm cooked white beans with chopped tomatoes, garlic, sweet paprika and thyme until the sauce thickens. Finish with parsley and a little wine vinegar. Creamy beans and bright tomatoes are a lovely match for a soft bowl of mămăligă.
3. Roasted peppers with walnut-garlic sauce
Peel roasted peppers and cut them into strips. For the sauce, grind walnuts with garlic, salt, water and a splash of vinegar until pourable. Arrange the peppers over slices of golden pan-seared mămăligă and spoon the walnut sauce on top. Parsley or coriander adds a fresh herbal note.
4. Garlicky greens, lemon and toasted seeds
Wilt spinach, sorrel or chard with spring onion and garlic. Add lemon zest and juice, then scatter over toasted sunflower seeds. Tender greens and crisp seeds make a quick topping, especially good with creamy mămăligă.
5. Eggplant, zucchini and tomato stew
Soften onion, add diced eggplant and zucchini, then stir in ripe tomatoes, garlic and basil. Simmer gently until the vegetables are tender and the sauce is rich. Spoon it into a shallow well in the mămăligă and finish with fresh basil.
6. Layered oven-baked mămăligă
Spread half of a firm batch of mămăligă in an oiled baking dish. Add a layer of mushrooms and onions sautéed with finely sliced cabbage and dill, then cover with the remaining mămăligă. Bake at 180°C until golden on top. Rest for ten minutes before slicing so the layers hold together.
7. Warm plums, walnuts and cinnamon
For a sweet bowl, gently cook fresh or dried plums with a little water and cinnamon until soft and syrupy. Spoon the fruit over warm mămăligă and add toasted walnuts. A little orange zest gives the bowl a bright finish.
Build a satisfying plate
Choose one substantial topping—beans, mushroom ciulama or vegetable stew—then add a fresh, tangy or crunchy accent: herbs, pickles, lemon, seeds or walnuts. Leftover mămăligă can cool in a shallow layer, be sliced, and browned in a skillet the next day.
